Overview
The American pitcher plant overturns the usual idea of a plant: rather than pull food from rich soil, it traps and digests insects to feed itself. The habit took shape because Sarracenia grow in nutrient-poor acidic bogs that offer them next to nothing. Every pitcher is a single leaf reshaped into a slick-walled trap, its rim baited with nectar that draws insects down toward the base.
Sarracenia are temperate plants of the eastern North American wetlands, and that home shapes the whole of their care. They want bright sun, soaked roots through the growing season, and a true cold rest in winter. Skip the winter dormancy and the plant slips away by degrees, no matter how well it is treated the rest of the year.
None of this makes them fussy, only particular. Rainwater in place of tap, a peat-and-sand mix in place of potting soil, and a sunny perch above a water tray give you tough, long-lived perennials that come back larger each spring. Get the water or the dormancy wrong, and the healthy traps give way to brown pitchers and a rotting crown.
Care

Light
Give the plant full sun, ideally 6 or more hours of direct light a day. That sun is what draws out the red and purple veining and holds the pitchers standing tall. In shade the traps flop, fade, and catch far less.
Water
Keep the medium constantly wet through the growing season by standing the pot in a shallow tray of water, bog-style, while the rhizome and crown sit above the waterline. Use mineral-free water only, that is distilled, reverse-osmosis, or rainwater, since the salts in tap water gather and burn the plant. In winter, ease back and keep the mix just damp rather than flooded.
Soil
Plant it in a lean carnivorous mix of sphagnum peat moss with sand or perlite, close to half and half. Keep the pH acidic, between 4.0 and 6.0. Skip ordinary potting soil, and never work in fertilizer or lime, since any of those will kill it.
Temperature
These plants ride a wide temperature swing, from about 5°F to 95°F (-15°C to 35°C), which spans a hot bog summer and a freezing winter. The cold tolerance is the point: the chill is what triggers dormancy.
Humidity
Average humidity in the 40% to 70% range suits them well, and the wet tray below keeps the air around the pitchers moist enough. No misting and no higher target are needed.
Feeding
Give this plant no feeding at all. The pitchers trap and digest their own insects, and any fertilizer in the soil, or fatty food dropped into a trap, will burn it. With bugs and sun, it wants for nothing.
Pruning
In early spring, just before fresh growth and flowers appear, cut away the dead brown pitchers. Leave that old foliage in place over winter, where it shields the crown from cold. Trim spent flower stalks once the bloom is done.
Repotting
Repot every 2 to 3 years in early spring, the same moment that suits dividing the rhizome. Move up when the rhizome crowds the pot edge, roots push through the drainage holes, or the medium breaks down and stops holding water. Use fresh peat-and-sand each time.

Grown out, the plants stand 6 to 36 inches (15 to 91 cm) tall by species, and spread 6 to 24 inches (15 to 60 cm) wide. The tall trumpets and the squat purple types sit at the far ends of that range.

Burnt pitcher tips, halted growth, and a pale crust on top
Scorched brown tips on the pitchers and a chalky white film across the medium point to mineral salt damage from tap water, fertilizer, or ordinary potting soil. Switching to distilled, reverse-osmosis, or rainwater and flushing the medium hard rinses the salts back out. Where garden mix or potting soil fills the pot, the plant moves into fresh peat-and-sand, and the soil is never fed.

A soft, black rhizome under a slumping plant
A rhizome gone soft and dark with a sour smell is the mark of crown rot, usually after the crown sat soaked, the air went still, or the winter ran too warm. The plant is lifted, all the blackened, mushy tissue is sliced off, and the firm surviving pieces go back into fresh damp peat-and-sand. Water reaches them only from below by the tray method, with the crown held clear of the waterline so it never sits wet.

Limp, washed-out pitchers stripped of their veining
Pitchers that lean over and fade from their red and purple veins to a dull green are short on light. Set in full sun for 6 or more hours of direct light, the next pitchers rise straight and stiff, their walls etched again with bright veining. A plant carried out of a dim corner is shifted in stages, since a sudden blast of hard sun can sear the slender tubes.

Pitchers going brown and slumping back in fall and winter
The browning tubes are a sign of winter dormancy, not trouble. As light fades and the air chills, the plant withdraws and lets its old pitchers turn papery and brown while the rhizome stays firm in the medium below. The dead leaves can sit there over winter as a brown collar over the crown, the mix stays just damp, and the spent pitchers are cut away in early spring before fresh green shoots push up.

Toxicity
Good news for pet owners: the American pitcher plant is not toxic. It carries no known poison, and the digestive fluid pooled in the pitchers is far too weak to harm an animal or a person. The plant is fragile, though, so the real reason to keep it out of reach is to guard the brittle traps, not the curious nose at them.

Varieties
Sarracenia spans a handful of distinct species, from towering yellow trumpets to ground-hugging purple cups. A few show up often in cultivation, and a couple are rare enough to hold legal protection.
Sarracenia flava (Yellow trumpet)
Yellow-green trumpets rise to about 90 cm and open into a wide flaring lid, above which nodding bright yellow flowers hang in spring.
Sarracenia leucophylla (White-topped pitcher plant)
Upright pitchers wear crisp white upper sections netted with red veins, and a strong second flush of fresh growth follows in autumn.
Sarracenia purpurea (Purple or Northern pitcher plant)
Low, squat purple pitchers press against the ground and cup pools of rainwater, and this most cold-hardy species ranges north into Canada.
Sarracenia oreophila (Green pitcher plant)
It carries Federally Endangered status and a CITES Appendix I listing, so its wild collection and trade are legally restricted.
Sarracenia rubra subsp. jonesii (Mountain sweet pitcher plant)
This Federally Endangered plant raises slender red-veined pitchers and fragrant flowers at only a few Carolina sites.
