Look at a sunchoke in bloom and the family shows plainly: it is a North American sunflower grown for its roots rather than its flowers. The Jerusalem artichoke name misleads, since the plant has nothing to do with artichokes or with Jerusalem. It is Helianthus tuberosus, a tall perennial that lifts bright yellow, sunflower-like flowers in late summer over fat roots that taste faintly nutty and sweet.

Under the soil sits the real prize: knobby, plump tubers with a nutty, faintly sweet flavor. The plant that makes them is remarkably tough, holding up to cold as deep as -22°F (-30°C) and taking poor soil without a check. That same toughness shows in its reach, since a single tuber left behind swells into a fresh patch the next spring.
